A Vegan Superbowl

My name is Callie and I'm a cheesaholic. It's been one day since my last cheese-out.

We were invited to a Superbowl party and I was ecstatic because my friends were all vegan's. That was going to make staying on track on one of the hardest days in the year easy, right? (My philosophy of veganism was that I was going to eat whatever I wanted on certain days of the year like Thanksgiving, Christmas, New Years, birthday parties, 4th of July but I am fast realizing that American's will find a way to make every day one of those days so I have had to shave back on my "whatever" days and the Superbowl was one of those days that didn't make the cut.)

Well, I bought all kinds of yummy vegan food for the party. I took Izzy soda, couscous, fresh guac, humus, pita, veggies and a fruit salad. I was totally going to be the best vegan there. I walked up to the food line and my VEGAN friend had made the yummiest looking CHEESY enchiladas! What the heck?! Here I was trying to be good and we were all supposed to be vegan (except Andy and one other guy.) We were all standing around pretending like we were not eyeing the cheesy goodness but in the end, the girls demolished the CHEESY enchiladas. So much for being good but boy were they yummy. Now I have to do P90X for the whole month to make up for it but it was WORTH IT! They were AWESOME! Valentine's Day was just stricken from the eat-whatever-you-want-day list in favor of yesterday's fiesta. I'm going to have to wait for the girl's birthday party to eat FROSTING! Get ready for that post. I'm sure it will be epic.

For now... bring it on Horton! I'm back on the wagon.

Sorry...

I haven't been around much because I'm totally caught up in cooking and watching 24.

Most people were like, "What? Is Jack's wife really dead?! We have to wait 4 months to figure that out?"

I'm like, "Season finale. Hmmm...." *4 seconds (not months) later* "Hmm... season premier!" Awesome. I love Netflix. And can I just say that Jack Bauer is the John McClane of television. I figured we've watched enough Die Hard during previous winters. 24 is the new Die Hard.

The cooking has been fun. I got down the bean pot to make Boston Baked Beans for my husband and his brother and then, BAM! I was making beans left and right. It's been awesome. For those who are vegan, it's the best! My Spicy Black Beans were really fun and I'm moving on to some lentil dishes hopefully with some curry. Everyone should get a bean pot and a dutch oven. I love the winter for hot stews and soups. Including this beef stew from Better Homes and Gardens magazine they sent me in the mail. AWESOME!

So, this is going to be my winter: watching 24, eating my beef stew, and playing with my babies.

The New Granola Bars

I posted a recipe before that was just not quite perfected. These are a much better recipe than before and I know you will love them if you give them a try. They don't take long at all. If I can do them between taking care of an infant and dealing with 3 other toddlers, you can and you will never regret it!

2.5 cups rolled oats (toasted in the oven at 350 for a few minutes - be sure to stir them every now and then)
2 cups rice cereal 
1 cup all purpose flour
1 tsp baking soda
3/4 cup Earth Balance vegan buttery spread (softened)
1/2 cup brown sugar
1/2 cup honey (Make sure its not to strong of a tasting honey. Remember, this is just for texture!)
1 cup chopped pecans
1 cup craisins (dried cranberries)
1 cup mini chocolate chips (semi-sweet)

Preheat oven at 325.

Toast oats and nuts. (Ok, I confess. I bought pecans already toasted because who wants to be in the middle of toasting and have to take a two year old on an emergency potty run and forget about them and have them burn? They are REALLY expensive but definitely the best for this recipe! I also bought them sugared or something and they just added a bit extra sweetness to the bars.)

Mix toasted oats, nuts, flour and baking soda. Allow mix to sit and cool before adding to wet ingredients.

Mix butter, brown sugar, and honey. Allow this to cool a bit also or you will melt your chocolate chips and have chocolate bars instead of tiny chocolate chips nicely spread throughout your bars.

Fold together wet and dry ingredients.

Add craisins and chocolate chips.

Press onto well greased cookie sheet.

Bake at 325 for 18-25 minutes or whenever it gets a little brown on top.

Let cool for 10 minutes and cut but do not remove from cookie sheet. I never cut them straight but I know it's best to keep them all uniform-ish to cut the whole thing in half and halfs and halfs then the other way the same thing.

Let cool all the way before you take them off the cookie sheet!

Wrap individually in wax paper for storage until service. I say wrap each one because of you just stick them in a container (which I do when I'm really to busy to sit and watch The Big Bang Theory and wrap 36 bars) they stick together and are hard to get out and unless you are having a party where you are serving all 36 bars, it's only going to get worse...

Now that you have made this recipe, I will tell you that it's vegan - accept for the chocolate chips which have milk fat in them... boo - (you knew that because of the buttery spread) but no one will know. You just feed these to them and they will be like, "AWESOME!" and never have a clue.
